No, the crust wasn't too terribly brown but there were a few spots on the filling that were pretty brown. I think it was overall just a little heavy because of too many sweet potatoes which changed the dry/wet ingredients ratio. That should fix it all. BTW, I had a bite of it today, cold, and it tas...

Beana--fed pie to coworkers, who did NOT think it was too sweet. Must just be me. :) Got good reviews! I am going to measure the sweet potatoes a little more carefully next time because I think I had too much. That would fix the only other issues, which was that it was a little dry. Thanks for the g...

Beana--maybe my sweet potatoes were extra sweet? Who knows.

I'll be a little more careful in my measuring next time and see what happens. :)

Hmmm . . .well, I made the first one and it turned out . . . ok. I think I put a little too much sweet potato in it because it's a little dry. (And I think I overcooked the sweet potatoes just a little.) It's good, but it's REALLY sweet! Woo-ee! Bruce ate some and said, "Needs cinnamon." :...

Beana--I'm going to make this tonight as a test run.

Do I roast with the skins on and then peel and discard the skins, or does the whole thing go in there? I know you said to toss in all the carmelized sugar from the sweet potato, but what about the skins themselves?

Beana--Sweet Potato Pie?

Beana--are you the person who has a favorite sweet potato pie recipe? We're going to a Kwanzaa celebration at the adoption agency next week (yes, timing is WAY off, but hey . . .) and we're supposed to bring a side dish. We were given a suggested list of dishes and recipes and sweet potato pie was o...

Apparently our fathers share the same fear of shouting out the wrong name in bed My DH's two previous serious relationships were with women named Jennifer. I'm not even the first redheaded Jennifer he dated. Aren...

I'll have to ask him about that!

Actually, we were being goofy and looking at our third and fourth choice boy names--envisioning a platoon of little boys. ;)

I already know my mom doesn't like our first choice boy name. Eh. Oh well--she has time to adapt. :)
